Mario Makes His First Batch Of Peanut Butter Cookies From Scratch
My eight-year-old rants and raves about the peanut butter cookies that he gets at school so when he came home on today I decided to work alongside him and teach him how to make his own batch of cookies. After all, Mario assists me in the kitchen all of the time when I’m making pound cakes, cupcakes or sugar cookies for the family. The past several months I have been introducing healthier snack choices to the kids like fruits, nuts & granola bars to name a few. Thus far the progress has been going well and we have even implemented coconut smoothies into the mix.
The recipe was really easy to follow and I found it in one of my Pillsbury Cook Books. Since this was Mario’s first time making cookies with minimum assistance I decided that this was the best one for him to follow. Perhaps later on I will teach him one of my recipes that I have memorized from childhood. As many of you may know that it’s so much faster if you go ahead and premeasured all of your ingredients. This prevents you from making any mistakes with measuring and adding ingredients. Here’s the recipe and step-by-step instructions:
Makes 4 Dozen (Yes if you make them small)
Ingredients:
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup butter or margarine, softened
1/2 cup peanut butter
1 teaspoon vanilla
1 egg
1 1/4 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
4 teaspoons sugar
Directions:
- Heat oven to 375 F. In large bowl, beat 1/2 cup granulated sugar, the brown sugar and butter with electric mixer on medium speed until light and fluffy, scraping bowl occasionally. Beat in peanut butter, vanilla and egg until well blended. On low speed, beat in flour, baking soda and salt until well combined, scraping bowl occasionally.
- Shape dough into 1-inch balls; place 2 inches apart on ungreased cookie sheets. With fork dipped in 4 teaspoons sugar, flatten balls in crisscross pattern.
- Bake 6 to 12 minutes or until set and golden. Immediately remove from cookie sheets.
Variations:
Chocolate Chip-Peanut Butter Cookies: Stir in 1 cup semisweet chocolate chips (6oz) into dough . Makes 4 1/2 dozen
Nutty Peanut Butter Cookies: Stir in 1 cup chopped peanuts into dough. Makes 4 1/2 dozen.
