How To Make Kid-Friendly Feta Cheese & Spinach Stuffed Chicken {Recipe Included}

Healthy Chicken Recipes That Your Kids Will Love

 

Happy Friday! I’m hoping on real quick to share a dinner option that I prepared on last night for my kids. Let me start off by saying I did not create this recipe. I was actually watching “Fearless in the kitchen” the other day and say a Chef teaching a musician how to create a signature dish because his current dish was spider goulash. YUCK! Basically it was a pot full of frozen veggies and meats. If you all follow me on social media you all know that I have been on a journey to eating healthy and its been a struggle because I’m that mom who has picky eaters and is also a picky eater. Not a great combination. Not only do my kids say that they don’t like certain things so do I. I wasn’t even going to create a post because I started out with a few pictures and then said screw it but after posting the finished product on social media I started getting inbox request for the recipe.

On yesterday I decided to try the new dish out on my kids. Thank God for DVR because I was able to save the show and attempt to re-create the signature dish. I headed to the market to grab all of my ingredients which cost me a total of $25. In my opinion not bad for a family of four..well five because my oldest sons girlfriend stayed over for dinner too.

Stuffed Chicken Ingredients:

  • Split Chicken Breast with skin
  • Green Onions
  • Garlic
  • Fresh Spinach
  • Olive Oil
  • Feta Cheese
  • Egg
  • Dill
  • Paprika

Let’s get started! The stuffing was prepared first. Please keep in mind that I did not measure anything like on the show. I basically free styled in the kitchen. I purchased a small bowl of Feta Cheese which I mixed in separate bowl with on egg. I crumbled the cheese up a little more than the show. In a small wok I added some olive oil, finely chopped green onion, a few pieces of feta cheese and the fresh spinach. I realized after I was done sautéing the ingredients that I left out the minced garlic (so you can add if desired).

I then took the sautéed spinach mixture and added it to the Feta Cheese/Egg Mixture. Blend together because this is your stuffing. I chose to not cut my spinach smaller because I simply love spinach. Take your chicken and lightly life the skin on the top and add your stuffing mixture. Once added pull the skin down and press gently on top to spread the stuffing. When all of the chicken breast are stuffed you will the take a piece of wax or parchment paper and place it on your baking sheet, pour some olive oil on top and add the chicken. I chose to sprinkle a little fresh dill on top of my chicken along with some paprika.  I baked for one hour and fifteen minutes. The show didn’t give a cooking time and they also used turkey instead of chicken.

I paired my feta cheese and spinach stuffed chicken with a simple chicken rice pilaf ( a quick recipe I made up as I was going basically). It’s super simple to make and it cooks super fast while the chicken was in the oven.

Chicken Rice Pilaf Ingredients:

  • Rice
  • Bell Peppers
  • White Onion
  • Tomatoes
  • Butter
  • Chopped Chicken
  • Bay Leaf
  • Chicken Stock

The pilaf is super easy to prepare. There is just one rule. Don’t Open The Pot!

Grab your butter, melt than add finely diced bell pepper, tomatoes, onions and chopped chicken (sauté). Next added your rice ( I used two cups) and add the chicken stock. Lastly add the bay leaf, cover and allow to cook. Remember No Peeking…just allow it to cook. Simple Right? Here’s the finish dish:

Basically the kids had no idea and needless to say there wasn’t any food left on their plates!  They had no idea that they ate onions, bell peppers or spinach. All things that at least one of my kids stated that they didn’t like. 10 points for Mommy!
